Simple supper: Tomatoes on toast
An indulgent supper for one is tomatoes on toast, finds Flora Howard

Serves 1
Cooks note: This is an unbelievably easy and delicious light lunch or supper.
Ingredients: Ripe vine tomatoes Bread Garlic (optional) Sea salt and freshly ground pepper Olive oil
Method: Preheat the oven to 200ºC. Cut the tomatoes in half and place into an oven proof dish. Drizzle with a little olive oil, a sprinkle of salt and a grind of pepper. Roast in the hot oven for up to 10 minutes. Lightly toast any sort of bread you have - it all works well. Drizzle the toast lightly with olive oil and rub with a little garlic. Remove the tomatoes from the oven and place onto the toast. Return the tomatoes on toast to the oven for a few minutes.
Serve immediately
