Simple supper, easy and delicious sausage and mash

Serves 2
Ingredients 6 good sausages (I used Waitrose Lincolnshire Pork Sausages with sage and thyme, £2.18 from Ocado) Desiree potatoes for mashing (2 medium per person) Butter Full cream milk / cream Onions Salt and black pepper
Method Heat oven to 180 ºc and cook the sausages on a deep-sided baking tray for 30 minutes. Meanwhile, cut the potatoes into pieces and boil them for 20 minutes until they are tender and the skin soft. Drain and mash with butter, a dash of milk or cream (whichever you have in the fridge) and season with a generous amount of salt and freshly ground black pepper. The red skin is delicious in with the mix. While the potatoes are boiling, cut the onions into slices and sweat in olive oil until soft. These can be eaten as fried onions or made into onion gravy by adding a dash of red wine and transferring the mixture to the sausage tray to absorb the juices. Serve in deep-sided plates with peas.
