Simple supper: Lamb cutlets with mash recipe
One for a dinner party with friends - simple lamb cutlets with mash.


Lamb cutlets with mash recipe (serves 4)
Ingredients 12 lamb cutlets (3 per person) 4 large potatoes Green beans Redcurrant jelly
Method Peel and cut the potatoes into chucks and boil in lightly salted water until soft. Mash with butter and cream and season to taste. Meanwhile heat olive oil in a frying pan and stack the cutlets fat side down on the hot pan. Being careful not to let the fat burn you, make sure the fat is crisping up and browning, this will add delicious flavour. Remove the cutlets from the pan and grill on a high heat for 5 minutes each side, the meat should still be pink in the middle. Deglaze the frying pan with some red wine to use as a jus. Serve the lamb and mash with steamed green beans and redcurrant jelly.
