Simple supper: easy goat’s cheese on toast for a girly supper

Serves 2 as a girls supper
Ingredients Ragsone goat's cheese Onion marmalade (Tracklements do a very good one) Rocket leaves Olive oil Baguette
Yorkshire soup, Pea and spinach with fresh herbs (available from Waitrose)
Method Pre-heat oven to 180°c. Break off two pieces of baguette (I tend to avoid the nose) and with a bread knife slice into the sides and flatten onto a baking tray. Spread with onion marmalade and lay slices of the goat's cheese over the bread. Bake in the oven for 10 minutes or until the goats cheese begins to soften and brown a little. Remove from the oven, scatter over some rocket leaves and drizzle with olive oil. Serve warm with a bowl of soup.
