Combine fennel with chicken to make this delicious recipe

Perfect chicken and fennel
Serves 2
Ingredients
2 chicken breasts, 1tsp each fennel and coriander seeds 2 medium onions, finely chopped 2 fennel bulbs, sliced Small tin tomatoes Glass of dry white wine Measure of Pernod Thyme and bay leaf 1tsp lemon juice Olive oil Salt and pepper
Method
Fry the chicken breasts in oil, then remove them. Fry the onion and fennel until soft. Add ground spices, wine, Pernod, tomato, lemon juice and herbs. Return the chicken to the pan and let it simmer on the hob with the lid on for 40 minutes. Good with country bread.
